TZATZIKI WITH MINT

Preparation: 10 min
In the fridge: 1 hour
For 4 persons
Ingredients
1 medium cucumber, with skin,
washed
300 gr strained yogurt
3-4 cloves of garlic, grated
100 ml extra virgin olive oil
leaves of 1 bunch fresh mint, finely
chopped
3 tbsp white vinegar
salt, pepper
Instructions
Grate the cucumber on cheese grater. Squeeze it well with your hands, and put it in a large bowl.
Add the yogurt, the grated garlic, the olive oil, the mint, the vinegar, salt and pepper, and mix the ingredients very well with a wooden spoon.
Cover the bowl and leave the tzatziki in the fridge for 1 hour, until the aromas of its ingredients are mixed. Serve cold
